Rooted in Portuguese olive-growing heritage, Santllana combines ancestral harvesting methods with modern cold-extraction technology. Harvested from sunny Mediterranean groves, Santllana olives are picked at peak ripeness and pressed within hours to capture the freshest aromas, maximum polyphenol antioxidants, and lowest natural acidity. Every bottle delivers authentic Mediterranean craftsmanship straight from the grove to your table.
Difference between Extra Virgin, Virgin, and Classic
- Azeite virgem extra: extra virgin olive oil, the best quality, is the purest form, extracted mechanically without heat or chemicals. Best used raw for drizzling, dipping, and finishing dishes.
- Azeite virgem: virgin olive oil, still natural with slightly higher acidity and less intensity of flavour. Best middle-ground option for both everyday cooking and light sautéing.
- Azeite: often called classic or pure olive oil, is usually a blend of refined olive oil and a percentage of virgin or extra virgin to improve flavour. It has a more neutral taste making it ideal for cooking and frying.
Monovarietal Premium vs. Master Blend
-
Premium Monovarietal (Single Olive Variety): Crafted from 100% single-origin olives harvested from a single estate. Monovarietal oils showcase the pure, unblended terroir, personality, and distinct character of one specific olive cultivar. It is bold, expressive, and prized by connoisseurs for finishing dishes.
-
Master Blend (Coupage): A curated harmony of multiple olive varieties combined in precise ratios. Blending brings together the strengths of different cultivars to create a smooth, highly versatile, everyday olive oil.
Tasting Notes Premium
-
Aroma: Fresh green tomato leaf, artichoke, and freshly cut grass with hints of green apple.
-
Palate: Robust and full-bodied. Initial notes of fresh herbal bitterness balanced by a clean, buttery undertone.
-
Finish: A firm, pleasant peppery throat kick (a key indicator of high polyphenol levels) that settles smoothly.
- Appearance: Vibrant golden-green with bright clarity.
Tasting Notes Blend
-
Aroma: Delicate notes of ripe orchard fruit, green almond, and subtle wild herbs.
-

-

Culinary Pairings Premium
-

-
Salads & Starters: Ideal for bold heirloom tomato salads, caprese with fresh buffalo mozzarella, burrata, and roasted red peppers.
-
Artisan Breads & Cheeses: Drizzle over warm sourdough or pair with sharp aged Spanish manchego, Parmigiano-Reggiano, and cured jamón.
-
Soups & Stews: Add a final swirl over rich gazpacho, creamy white bean soup, or roasted pumpkin soup to elevate aroma and flavor depth.
Culinary Pairings Blend

Everyday Cooking & Cooking: Excellent for light sautéing, pan-searing poultry, roasting Mediterranean vegetables, and preparing delicate pasta dishes.
