Bring the sun-drenched heritage of Portugal’s finest olive groves straight to your table. Sabor do Sul is a premium, cold-pressed Extra Virgin Olive Oil crafted from a meticulous blend of traditional Portuguese olive varieties—including Galega and Maçanilha Algarvia.
Sourced from estate-grown olives harvested at peak ripeness, this exceptional oil captures the authentic, vibrant spirit of Iberian gastronomy. Unlike mass-market blends that rely on generic Iberian cultivars, Sabor do Sul celebrates the unique terroir of southern Portugal, relying primarily on local estate olives harvested at the perfect moment of maturity.
Difference between Extra Virgin, Virgin, and Classic
- Azeite virgem extra: extra virgin olive oil, the best quality, is the purest form, extracted mechanically without heat or chemicals. Best used raw for drizzling, dipping, and finishing dishes.
- Azeite virgem: virgin olive oil, still natural with slightly higher acidity and less intensity of flavour. Best middle-ground option for both everyday cooking and light sauteing.
- Azeite: often called classic or pure olive oil, is usually a blend of refined olive oil and a percentage of virgin or extra virgin to improve flavour. It has a more neutral taste making it ideal for cooking and frying.
Tasting Notes
-

-
Appearance: Clean and limpid with a vibrant, intense greenish hue.
Culinary Pairings
The balanced and fruity intensity of the Maçanilha Algarvia makes Sabor do Sul the perfect finishing oil for traditional Mediterranean cuisine.
-
Cru (Raw Drizzle): Ideal as a final elegant touch poured raw over crisp garden salads, fresh summer vegetables, warm rustic soups, and pasta.
-
Seafood & Coastline Classics: Elevates simple grilled or boiled fish, roasted octopus, and regional Portuguese favourites like bacalhau (codfish) without masking their delicate natural flavours.
-
The Bread Dip: Pour it directly onto a plate with a pinch of sea salt for dipping fresh, crusty sourdough or wood-fired bread.
